One-Dish Mediterranean Salmon Recipe

I’m not a fish lover. I don’t like seafood much at all. Fried white fish or fried shrimp are sometimes okay, but mostly because I like tarter and cocktail sauce! Bestie Boo made this one-dish Mediterranean salmon recipe and I was surprised I actually liked it!

One-Dish Mediterranean Salmon Recipe

I spent an afternoon running errands with Bestie Boo. He lives two hours away and I spend a few days at his house every couple of months. We popped into the store for dinner ingredients.

“How about salmon?” he asked.

“I don’t like salmon.”

“You’ll like this salmon.”

We’ve been friends since 8th grade and he has rarely (if ever) steered me wrong, so I agreed to try it.

Ingredients

He went through the store throwing things in the cart. Then he got salmon from the seafood counter and asked them for a couple of their steamer bags.

  • Bag of pre-cooked wild rice
  • Can of diced tomatoes
  • Can of artichoke hearts
  • Can of white beans
  • Minced garlic
  • Salmon fillets

Super easy salmon recipe

This is so easy! We just threw all the ingredients along with salt and pepper into the steamer bags and baked them at 375 degrees for 15 minutes. No dishes and it was delicious! You can also just throw it all in a casserole dish and bake it that way.

You could probably substitute chicken in this Mediterranean salmon recipe. Or shrimp or another fish. You could also add more beans to make it vegetarian. Switch up the grains or other ingredients. Add lemon, feta, kalamata olives, or anything else you want! This is an easy dish to make your own.
