I made a super easy pasta dinner the other night. It was one of those throw random odds and ends in a skillet and hope it works out kind of nights. This is spaghetti with kielbasa and veggies.
We used gluten free spaghetti because we happened to have some on hand from one of my many attempts to give the GF lifestyle a chance. (I am wondering if it might help my daughter’s chronic tummy issues, but lack the motivation to follow through for long enough to get a good indication if gluten free would benefit her or not.) It was Target’s Market Pantry brand and it was really pretty tasty! A bit chewier than we like – it wouldn’t cook past al dente, which I know is how most people like it, but we prefer our pasta soft. (We also eat our beef very well done.)
While the pasta was boiling, I chopped up carrots, green onions, a clove of garlic and turkey kielbasa and threw them in a saute pan with some extra virgin olive oil. I tossed in a couple of handfuls of cherry tomatoes, too.
Once everything was ready, I drained the pasta and then tossed it with the sausage and veggies. I added a handful of grated Parmesan cheese and dinner was DONE!
We do lots of different varieties of spaghetti with kielbasa. It cooks up quickly and is usually a bit hit.
