Spinach & kale salad that’s better than chocolate cake

We had one of those “throw dinner together” kind of nights earlier this week.  I’d made my daughter a whole wheat flat bread salad filled with chicken breast, lettuce, tomato, salsa, shredded cheese and a dollop of sour cream.  The plan was a chicken quesadilla, but our tortillas were all dried out, so I improvised.  She had baby carrots and grapes on the side.

I wasn’t so hungry, so  I was noshing on carrots, Boar’s Head deli turkey slices and a spinach and kale salad.

She finished her dinner before me and was eating a small slice of chocolate cake when I offered her a bite of my spinach and kale salad.  She said, “MMMMMM,” pushed her cake away and asked for more salad!

I walked her through how to throw one together for herself.  She sat down and ate it, never taking another bite of that cake.

We had it again the next night as a side with our homemade tomato soup.  My daughter’s best friend liked dipping her spinach in her soup.

The dressing is amazing.  I picked it up on a whim and am so glad I did.  In my grocery store, it was in the refrigerated bottled dressing section in the produce department.

The chocolate cake was good.  I feel like a parenting super hero that my child passed it up to eat salad!

This was my first time using kale raw.  Mixing it with spinach was a good combo.  Kale salad will definitely be in regular rotation!

Better Than Chocolate Cake Spinach & Kale Salad

Ingredients
  

  • 4 cups Kale
  • 4 cups Spinach
  • 1 cup Green grapes
  • 1/4 cup Parmesan cheese
  • 1/4 cup Pumpkin seeds
  • 1/4 cup Marzetti's Simply Dressed lemon vinaigrette

Instructions
 

  • Toss all ingredients together in a large salad bowl.
  • Enjoy!
