Healthy Game Day Snacks: Al Fresco Peachy Spice Chicken Meatballs

In case you haven’t heard…..there’s a big football game coming up. The. Big. One.

Or so I hear.

My family is not really into sports.

Maybe we’ll tune in for the Puppy Bowl.

More likely, we’ll have our own game night and bust out My Little Pony Monopoly or Clue. Maybe even poker.

At any rate, we’ll need snacks!

And the good people at Al Fresco sent me some of their chicken products to try like spicy jalapeño chicken meatballs, chicken bacon and sweet apple chicken sausage!

Their products are made with lean skinless chicken meat.  They are high in protein and gluten free.  They fit right in with the healthier eating I’m striving for as I try to get control of my diabetes.

I’ve seen their sausages in the store, but have been afraid to try them.  They looked too healthy to taste good, ya know?

But I’m never afraid to admit when I’m wrong.

I WAS WRONG!

I was inspired to create a couple recipes of my own with the goodies they sent me.  I’ll share what I’m calling “peachy spice chicken meatballs” today and a sausage and cheddar corn muffin next time.  Stay tuned!

Al Fresco Peachy Spice Chicken Meatballs

I used Al Fresco’s jalapeño and pepper jack chicken meatballs to make an easy peasy and delicious appetizer!  Seriously quick, simple and yummy.  I stuck the balls on skewers for snacking, but they’re also great as a main course on top of rice.

The chicken meatballs are fully cooked and in the freezer section.  They heat in the microwave in seconds.

I made a glaze using peach preserves to balance the spice.  Then I topped the meatballs with chopped green onion and cilantro.  That’s it.

Healthy Game Day Snacks: Peachy Spice Chicken Meatballs

Shrinking Momster
Peachy Spice Chicken Meatballs are the perfect blend of sweet and spicy. Serve them as a snack or appetizer or over rice as a main course.

Ingredients
  

  • 1 bag Al Fresco jalapeño and pepper jack chicken meatballs
  • 1/2 cup peach preserves*
  • 1/4 cup chopped green onion
  • 1/4 cup chopped cilantro
  • *More preserves may be needed depending on the amount of meatballs prepared.

Instructions
 

  • Heat peach preserves in a microwave save bowl until liquid (around 30 seconds)
  • Heat desired number of meatballs according to package directions.
  • Toss meatballs in preserves.
  • Place on skewers or toothpicks for appetizers if desired.
  • Top with cilantro and green onion.
