Broccoli, ham and pimento cheese crustless quiche

Fun fact: I don’t like pie crust.  Savory or sweet.  I just like the fillings.  I’m not a crust person.  But crustless quiche is my jam.

I invited some friends over last minute for a Saturday morning brunch.  I love to put together food for people, even if it’s just a spread of cheese, crackers and other snacks.  I originally thought I’d keep the brunch simple.  I picked up croissants, danishes and fresh fruit.  Simple.

But I woke up that morning and wanted to cook something.  However, I didn’t want to waste time going to the store.  I took inventory of what I had.

And this crustless quiche was born!

It has chunks of ham, broccoli and pimento cheese.  I love Palmetto Cheese brand.  Try it if you can find it in your area.  It’s really the best.

If you’re doing keto, NSNG, low carb, LCHF – make this.  You can adapt to your plan.

Not doing any of those?  Make it.  It’s so good.

Like crust?  Okay.  Make or buy a crust.  (But it’s already so good without it. )

I whipped this egg bake together fast using items I had on hand and hoped for the best.  It was done just as my friends arrived.  I took it out of the oven and popped the store bought croissants and pastry in to get warm and flaky.  I’d already baked up thick cut bacon and roasted baby potatoes with onion, peppers and garlic.  There were chunks of fresh watermelon and pineapple.  Oh, and a big dish of grape tomatoes.

And if that wasn’t enough I also made chicken salad and kale salad.  In case my friends didn’t want eggs.  Or carbs.

All this for three people.

Plus coffee and freshly squeezed orange juice.

I have a tendency to go overboard.

We talked and ate for hours.

Isn’t brunch with friends just the best?!

Who wants to come to brunch next?  I’ll gladly whip up this broccoli, ham and pimento cheese crustless quiche!  In fact, I made for another friend for dinner just a few nights later.

Perfect for breakfast, brunch, lunch or dinner. Eat hot, room temp or cold. Just eat it. It's GOOD.

Cook Time 40 mins
Total Time 50 mins

Ingredients
  

  • 5 eggs
  • 1/2 a container pimento cheese
  • 1 bag frozen broccoli florets thawed
  • 2 cups of cubed ham steak
  • 1/4 cup heavy cream
  • 1/4 cup chopped onion
  • pinch of salt and pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix eggs, cream, salt and pepper.
  • Combine other ingredients.
  • Pour into pie pan.
  • Bake until eggs are set, about 40 minutes.

    Made this morning, so good and easy. I have a lot of pimento cheese leftover from Christmas. I bought from Sams’s, Members Mark, Smoked Gouda Pimento Cheese. It is so good. I could not bear to through it out. 32 oz, container, so I just measured 1/2 cup. It turned out perfect, pretty and brown.
