Instant Pot Recipes for Every Meal
So here are three recipes to get you through a whole day of Instant Pot eating – one each for breakfast, lunch and dinner!
Breakfast: Oatmeal with Apples and Cinnamon
Ingredients:
- 2 cups old fashioned oats (Make sure you have old fashioned not the rolled, instant or quick kinds.)
- 5 cups water
- 2 apples, cored and chopped (You can leave the skin on if you’re in a rush or like it that way.)
- 1 teaspoon cinnamon
- 1 tablespoon butter or coconut oil
Method:
- Set Instant Pot to saute.
- Pour in water to start heating while you chop apples. (This helps bring the Instant Pot to pressure quicker.)
- Add coconut oil or butter, chopped apple, cinnamon and oats.
- Stop saute mode, put the lid on and switch to manual.
- Set to four minutes high pressure.
- Quick release when time is up.
- Immediately remove inner pot.
- Stir and serve.
Add additional topping if desired, such as milk, butter, raisins, brown sugar, apple pie spice, maple syrup, brown sugar, nuts or a dollop of Instant Pot yogurt. If you add brown sugar to a steaming hot bowl of oatmeal it will turn into a yummy syrup.
Lunch: Beef and Cabbage Soup
Ingredients:
- 1 pound of ground beef
- 1 32 ounce carton chicken or beef broth (or equal amount homemade broth)
- 1 can crushed tomatoes
- a head of cabbage
- 3 gloves garlic, minced
- 1 onion, diced
- 4 carrots, chopped
- 4 stalks celery, chopped
- Salt and pepper to taste
Method:
- Set Instant Pot to saute.
- Add the beef and brown. Season with salt and pepper.
- Pour in broth. (Heating the liquid helps bring the Instant Pot to pressure quicker.)
- Chop cabbage, garlic, onion, carrots and celery and add to the pot.
- Add can of tomatoes.
- Stir.
- Stop saute mode, put the lid on and switch to manual.
- Set to four minutes high pressure.
- Quick release when time is up.
- Adjust seasons if needed.
- Serve.
Switch up the veggies according to your favorites or what you have on hand. This soup makes a great packed lunch. Skip the beef and use vegetable broth for a vegetarian option.
Dinner: Instant Pot Pasta & Meatballs
Ingredients:
- 1 pound of your favorite pasta shape
- 1 jar of prepared marinara sauce
- 1 jar of water
- Bag of frozen meatballs
Method:
- Set Instant Pot to saute.
- Pour in sauce. (Heating the liquid helps bring the Instant Pot to pressure quicker.)
- Fill up the jar with water and add to pot.
- Add meatballs to the pot.
- Stir.
- Stop saute mode, put the lid on and switch to manual.
- Set to ten minutes high pressure.
- Allow pressure to release naturally (about ten minutes).
- Serve.
Use your own homemade sauce or meatballs if you prefer. Substitute ground beef or turkey or leave the meat out all together for a vegetarian option.
