Kid Friendly Cauliflower Risotto

Here's a grain free take on risotto using cauliflower.

Ingredients
  

  • 1 head of cauliflower washed and chopped into florets
  • 1 small onion diced
  • 1 clove garlic diced
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 1 jar of marinara sauce or equivalent amount of homemade
  • 1 packaged turkey kielbasa sliced
  • Optional: Parmesan cheese

Method
 

  1. Star browning onions and garlic in olive oil.
  2. Put cauliflower in blender or food processor and pulse until it has a consistency similar to rise.
  3. Pour cauliflower in the olive oil with onion and garlic, season with salt and pepper.
  4. Add sausage and sauce.
  5. Simmer until cauliflower is al dente and everything is hot.
  6. Top with Parmesan cheese if desired.
