No Sugar No Grain Peach Cobbler Waffles

These waffles are so good you won't believe they are grain and sugar free.

Ingredients
  

  • 3/4 cup almond flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 2 large eggs
  • 2 tbsp. softened salted butter
  • 3 tbsp. heavy cream
  • 1 tsp. vanilla extract
  • For compote:
  • 5 peaches chopped
  • 1 tbsp. apple pie spice

Method
 

  1. Mix together dry ingredients.
  2. Mix in eggs, butter, cream and vanilla.
  3. Cook in waffle iron in batches.
  4. Meanwhile, place peaches in a large microwave bowl and top with apple pie spice. (I leave the skin on.)
  5. Microwave on high for five minutes, stirring halfway.
  6. Top waffles with peaches.
  7. Serve.
