No Sugar No Grain Peach Cobbler Waffles

These waffles are so good you won't believe they are grain and sugar free.

- 3/4 cup almond flour
- 1 tsp. baking powder
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- 2 large eggs
- 2 tbsp. softened salted butter
- 3 tbsp. heavy cream
- 1 tsp. vanilla extract
- For compote:
- 5 peaches chopped
- 1 tbsp. apple pie spice
Mix together dry ingredients.
Mix in eggs, butter, cream and vanilla.
Cook in waffle iron in batches.
Meanwhile, place peaches in a large microwave bowl and top with apple pie spice. (I leave the skin on.)
Microwave on high for five minutes, stirring halfway.
Top waffles with peaches.
Serve.
