No Sugar No Grain Peach Cobbler Waffles Recipe

I got a new waffle iron yesterday! I was inspired to seek one out after seeing a recipe for no sugar no grain waffles at Satisfying Eats.  I’ve had a couple cheap irons in the past, but they were so hard to clean and made such terrible product that I threw them out after just a use or two.   I read ratings and went with a better quality machine this time.  And it was very near free after discounts, coupons and Kohl’s cash!

My daughter and I were excited to try out the recipe today.  We adapted it to be more of a sweet waffle, leaving out the bacon and cheese.  We left in the black pepper for a bit of zing, though.  We added some vanilla.  We add vanilla to nearly everything.

I bought a bunch of peaches at the grocery store yesterday and was very disappointed to bite into one last night and find it mealy and mushy.  I tried another one and got the same result.  Yuck.  So I cut them up this morning and turned them into a peach compote topping.

The result?  Peach cobble waffles!  YUM!

We’ve been trying to avoid sugar and grain off and on since I became acquainted with fitness guru Vinnie Tortorich.   We’ve been pretty consistent for about three weeks now, our longest stretch so far.  My 13-year-old daughter is a big fan of this way of eating.  I’ve long suspected she has a sensitivity to gluten or wheat and she says she feels much better eating this way.

I think she also likes it because it means mom is cooking real food most of the time now instead of relying on so much lesser quality convenience foods!  Real food like these yummy waffles!

No Sugar No Grain Peach Cobbler Waffles

These waffles are so good you won't believe they are grain and sugar free.

Cook Time 5 minutes
Total Time 10 minutes

Ingredients
  

  • 3/4 cup almond flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 2 large eggs
  • 2 tbsp. softened salted butter
  • 3 tbsp. heavy cream
  • 1 tsp. vanilla extract
  • For compote:
  • 5 peaches chopped
  • 1 tbsp. apple pie spice

Instructions
 

  • Mix together dry ingredients.
  • Mix in eggs, butter, cream and vanilla.
  • Cook in waffle iron in batches.
  • Meanwhile, place peaches in a large microwave bowl and top with apple pie spice. (I leave the skin on.)
  • Microwave on high for five minutes, stirring halfway.
  • Top waffles with peaches.
  • Serve.
