Starbucks Sous Vide Instant Pot Egg Bites With Ham and Broccoli

Facebook is going crazy for a knockoff version of Starbucks sous vide Instant Pot egg bites.  I haven’t tried the Starbucks version.  They’re made with just egg whites, which doesn’t appeal to me because I feel best with more fat in my diet.  Plus, they just don’t look good in my Starbucks display case.

But I hear they are wonderful!

Though pricey at $5 for two small bites.

(Apparently there’s also a bacon version with whole eggs instead of just white, but I haven’t seen that one in my local Starbucks.)

There are several versions going around for making Instant Pot egg bites as an alternative to the pricey Starbucks version.  I decided to give it a whirl for Sunday morning breakfast.

I’m so glad I did!

These things are DELICIOUS!

I modified the recipe from Foodie and Wine.  I used ham, broccoli and pepper jack cheese.  These things are velvety and and rich.

Lots of people are using little silicone baby food trays to make their Instant Pot egg bites.  I just gathered up whatever silicone muffin liners I could find.  I had a mixture.  HeartsMuffin topsBaskets.

Start by whipping up the egg mixture.  I’ll give my recipe below.  I used eggs, cottage cheese, cream, broccoli (frozen baby florets, thawed), ham, shredded pepper jack cheese, salt, pepper and Penzy’s Paris spice.

I threw everything in a mixing bowl except the ham and broccoli.  I then used an immersion blender to get the mixture nice and smooth.  I threw in the broccoli and gave it another whirl with the immersion blender to get it chopped up and integrated.  I diced some honey ham and stirred it in with a fork.

Then I filled the silicone muffin cups with the mixture.

Time to prepare the Instant Pot!  Pour a cup of water in the bottom of your pot.  Put in your trivet or a steamer basket.  I used the basket.  Put the eggs in the steamer basket.  Cover with foil and repeat for a second layer.  I didn’t cover the second layer with foil.  Mostly because I forgot, but they came out great.

Put the lid on and set for ten minutes on steam.  I let them sit about five minutes once it dinged and then did a quick release.

They were set and wonderful!

Sour vide egg bites in Instant Pot

The heart liners were on the bottom and they didn’t slide right out like the Instant Pot egg bites that were on the top layer.  I’m not sure if this had something to do with the shape, quality of liner or that they were covered on the bottom layer.  They still taste amazing.
