Chunky Cinco de Mayo Avocado Salad

I put them to use to whip up a chunky avocado salad in anticipation of Cinco de Mayo.

We actually eat avocados all the time.  It’s just more fun to say it’s for Cinco de Mayo.

Don’t the tools look cool spread out like that?  It makes me feel fancy having these in my drawer – and they all have protective covers to protect both the blades and clumsy fingers reaching in to grab a tool.

That’s the herb mincer, zester, wavy knife and avocado tool.  Using them made my salad come together quickly and easily – and look more appetizing than my usual preparation methods, which includes simply squeezing the avocado out of the skin into a pile of mush.

Chunky Avocado Salad

This avocado salad is great as a side, main course, dip or topping for your favorite protein.
Prep Time 10 minutes
Total Time 10 minutes

Ingredients
  

  • 2 avocados
  • 1/2 a small red onion
  • 1 lime
  • 1/4 cup fresh cilantro loosely packed
  • 1 large tomato
  • Salt and pepper to taste

Instructions
 

  • Slice avocado.
  • Chop tomato and onion into chunks.
  • Mince cilantro.
  • Toss ingredients together.
  • Mince lime and add to salad.
  • Squeeze the juice of lime over salad.
  • Add salt and paper to taste.

Enjoy this salad as a side dish on your next taco night.  Add chucks of leftover steak for a filling salad.  Spoon it on top of your favorite protein or use it as a dip.  It’s quick, easy, healthy, yummy and versatile.
