Easy Chocolate Peanut Butter Granola

This chocolate peanut butter granola is SO EASY to make and SO YUMMY! I shoveled it in my mouth uncooked. I ate it warm out of the oven. And I keep grabbing bits every time I walk through the kitchen.

Turns out homemade granola is ridiculously easy to make in addition to being delicious.

Why chocolate peanut butter granola?

This goodness came together today because of a perfect storm of factors and needs.

  • PB Fit sent me a huge jar of their new chocolate peanut butter powder a couple of months ago. It’s savory sweet perfection in smoothies, but I’ve been wanting to try it in something else.
  • Oats are BOGO at Publix this week.
  • I’ve been trying to eat more protein.
  • (TMI warning) I’ve been fighting constipation and inflammation lately.

Chocolate PB Granola Ingredients

This granola checks off all the boxes! Protein from the peanut butter powder. Inflammation fighting olive oil, honey, flax seeds, and chia seeds. Fiber in the oats.

I totally made this recipe up as I went. And I’m thrilled with how it came out!

Here’s what I used:

  • 2 cups oats
  • 1 cup PB Fit chocolate peanut butter powder
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 tablespoons chia seeds
  • 2 tablespoons flax seeds
  • Dash of salt

A failed start…

Confession: No-bake cookies were the plan. However, the mixture wasn’t wet enough to stick together. It was delicious uncooked, but very crumbly. So I switched my plan and made granola. Apparently “happy accidents” aren’t just for painting trees.

Granola variations

Change this up however you want! Some ideas:

  • Maple syrup instead of honey
  • Skip the sweetener and go savory instead
  • Plain peanut butter powder instead of chocolate
  • Or no peanut butter at all!
  • Add nuts, raisins, dried fruit, etc.
  • Use coconut oil instead of olive oil

How to use homemade granola

Put it in yogurt. Top it with milk. Sprinkle it on ice cream. Use it in a trail mix. Eat it by the handful! So many options.
